  • 2 lbs white fish fillets (snapper, cod, or tilapia)

  • 1 lb shrimp (optional, peeled and deveined)

  • 1 lime (juiced)

  • 2 tsp salt

  • 1 tsp black pepper

  • 2 tbsp olive oil

  • 1 onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 3 cloves garlic, minced

  • 2 tomatoes, diced

  • 1 cup coconut milk

  • 1 cup fish or vegetable broth

  • 2 tbsp dendê oil (red palm oil, optional for authentic flavor)

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup green onions, chopped

  • 1 tsp paprika

  • 1 tsp cayenne pepper (optional, for spice)


Instructions:

  1. Marinate the Fish:

    • In a bowl, season the fish with lime juice, salt, and black pepper. Let it marinate for at least 15 minutes.

  2. Sauté Aromatics:

    • Preheat your Platinum Jumbo Gourmet Skillet over medium heat.

    • Add olive oil and sauté onions, garlic, and bell peppers until they soften (about 5 minutes).

  3. Layer the Ingredients:

    • Arrange the marinated fish fillets and shrimp on top of the sautéed mixture.

    • Sprinkle with paprika and cayenne pepper.

  4. Simmer the Stew:

    • Pour in the diced tomatoes, coconut milk, and broth.

    • Cover with the Dome Cover and let it simmer on low heat for 15 minutes until the fish is tender.

  5. Finish & Serve:

    • Stir in dendê oil for authentic flavor (optional).

    • Garnish with fresh cilantro and green onions.
