Ingredients (Serves 4–6)
Protein & Base:

1 lb large shrimp (peeled & deveined)

1 lb firm white fish (cod, halibut, or sea bass), cut into chunks

1 tbsp olive oil
Aromatics & Vegetables:

1 medium onion, thinly sliced

3 cloves garlic, minced
-
1 red bell pepper, sliced
-
1 yellow bell pepper, sliced
-
2 medium tomatoes, diced
Sauce:
-
1 can (14 oz) coconut milk
-
2 tbsp tomato paste
-
1 tbsp paprika
-
1 tsp cumin
-
1 tsp smoked paprika
-
Juice of 1 lime
Fresh Finish:
-
½ cup fresh cilantro, chopped
-
Salt & pepper to taste
Instructions
1. Preheat the Skillet
Place your Platinum Large Skillet over medium heat. Add olive oil and allow it to warm evenly.
2. Build the Flavor Base
Add onion and sauté for 2–3 minutes until translucent.
Stir in garlic and cook for another 30 seconds.
3. Add Vegetables
Add bell peppers and tomatoes. Cook for 4–5 minutes until softened and fragrant.
4. Create the Sauce
Stir in tomato paste, paprika, cumin, and smoked paprika.
Pour in coconut milk and mix thoroughly. Let simmer for 5 minutes.
5. Cook the Seafood
Gently nestle fish pieces into the sauce. Cover with lid and cook for 5–6 minutes.
Add shrimp and cook uncovered for another 3–4 minutes until shrimp turn pink.
6. Finish & Serve
Squeeze fresh lime juice over the skillet.
Sprinkle with cilantro and season with salt and pepper.
