Ingredients

For the Fish

  • 2 mahi-mahi fillets (6–8 oz each)

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp ground coriander

  • ½ tsp sea salt

  • ¼ tsp black pepper

For the Coconut Lime Sauce

  • 1 tbsp butter

  • 2 cloves garlic, minced

  • ½ cup coconut milk

  • 1 tbsp fresh lime juice

  • 1 tsp lime zest

  • ½ tsp grated fresh ginger

  • ½ tsp honey

  • 1 tbsp chopped cilantro

Optional Garnish

  • Sliced red chili

  • Lime wedges

  • Fresh cilantro leaves


Instructions

1. Prepare the Fish

Pat the mahi-mahi fillets dry with paper towels.
Season both sides with smoked paprika, coriander, salt, and black pepper.

2. Heat the Platinum Medium Gourmet Skillet

Place the Platinum Medium Gourmet Skillet on medium heat and add olive oil.
Allow the skillet to preheat for about 1–2 minutes until the oil shimmers.

3. Sear the Fish

Place the fillets in the skillet.
Cook 3–4 minutes per side until a golden crust forms and the fish flakes easily with a fork.
Remove from the skillet and set aside.

4. Make the Coconut Lime Sauce

In the same skillet:

  1. Add butter and minced garlic.

  2. Sauté for about 30 seconds until fragrant.

  3. Stir in coconut milk, lime juice, lime zest, ginger, and honey.

  4. Simmer for 2–3 minutes until slightly thickened.

5. Finish the Dish

Return the mahi-mahi to the skillet and spoon the sauce over the fillets.
Cook for 1 additional minute to absorb the flavors.
