Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt & pepper to taste

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup sun-dried tomatoes (in oil), drained and sliced

  • 2 cups fresh baby spinach

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • ½ tsp Italian seasoning

  • Optional: pinch of crushed red pepper flakes

  • Fresh basil for garnish


Instructions

  1. Preheat & Sear Chicken:
    Heat 2 tbsp of olive oil in your Platinum Medium Gourmet Skillet over medium heat. Season the chicken breasts with salt and pepper. Sear the chicken for about 5-6 minutes per side until golden brown and cooked through. Remove and set aside.

  2. Sauté Garlic & Tomatoes:
    In the same skillet, lower the heat slightly and add minced garlic. Sauté for 30 seconds, then add the sun-dried tomatoes. Cook for another minute to release their flavors.

  3. Add Cream & Seasoning:
    Pour in the heavy cream, stirring constantly. Add Parmesan cheese, Italian seasoning, and a pinch of red pepper flakes (if using). Let it simmer until slightly thickened (about 2–3 minutes).

  4. Add Spinach & Chicken:
    Stir in fresh spinach until wilted. Return the chicken breasts to the skillet, spooning sauce over the top. Cover with the lid and simmer on low heat for 5 more minutes to marry the flavors.

  5. Serve:
    Garnish with fresh basil and serve hot over pasta, rice, or alongside roasted vegetables.
