Ingredients:

  • 2 lbs (about 1 kg) chicken thighs and drumsticks

  • 1/2 cup soy sauce

  • 1/3 cup cane vinegar (or white vinegar)

  • 1/2 cup water

  • 6 cloves garlic, minced

  • 2 bay leaves

  • 1 tsp black peppercorns (or ground black pepper)

  • 1 tbsp brown sugar (optional, for slight sweetness)

  • 1/2 tsp paprika (optional, for color)

  • 1 tbsp cooking oil

  • 1 medium onion, sliced

  • 2 potatoes, cut into cubes (optional, for a heartier dish)

  • 1 cup coconut milk (optional, for a richer taste)


Instructions:

  1. Marinate the Chicken

    • In a bowl, combine chicken, soy sauce, garlic, bay leaves, and black pepper. Let it marinate for at least 30 minutes (or overnight for better flavor).

  2. Preheat Your Platinum Large Gourmet Skillet

    • Heat the skillet over medium heat (no need for high heat due to its superior heat retention).

    • Add 1 tbsp oil and sauté onions until soft.

  3. Sear the Chicken

    • Add the marinated chicken to the skillet, reserving the marinade.

    • Sear until lightly browned on both sides (about 3-5 minutes per side).

  4. Simmer the Adobo

    • Pour in the reserved marinade, water, and vinegar (do not stir yet).

    • Cover the skillet with the Platinum lid and let it simmer on low heat for 25-30 minutes.

    • Add potatoes if using and simmer for another 10 minutes until tender.

  5. Final Touches

    • Add brown sugar and coconut milk (if using) and let it cook for another 5 minutes until the sauce thickens.

    • Adjust seasoning to taste.

  6. Serve & Enjoy!

    • Remove bay leaves and serve hot over steamed rice
