Ingredients:
-
2 lbs (about 1 kg) chicken thighs and drumsticks
-
1/2 cup soy sauce
-
1/3 cup cane vinegar (or white vinegar)
-
1/2 cup water
-
6 cloves garlic, minced
-
2 bay leaves
-
1 tsp black peppercorns (or ground black pepper)
-
1 tbsp brown sugar (optional, for slight sweetness)
-
1/2 tsp paprika (optional, for color)
-
1 tbsp cooking oil
-
1 medium onion, sliced
-
2 potatoes, cut into cubes (optional, for a heartier dish)
-
1 cup coconut milk (optional, for a richer taste)
Instructions:
-
Marinate the Chicken
-
In a bowl, combine chicken, soy sauce, garlic, bay leaves, and black pepper. Let it marinate for at least 30 minutes (or overnight for better flavor).
-
-
Preheat Your Platinum Large Gourmet Skillet
-
Heat the skillet over medium heat (no need for high heat due to its superior heat retention).
-
Add 1 tbsp oil and sauté onions until soft.
-
-
Sear the Chicken
-
Add the marinated chicken to the skillet, reserving the marinade.
-
Sear until lightly browned on both sides (about 3-5 minutes per side).
-
-
Simmer the Adobo
-
Pour in the reserved marinade, water, and vinegar (do not stir yet).
-
Cover the skillet with the Platinum lid and let it simmer on low heat for 25-30 minutes.
-
Add potatoes if using and simmer for another 10 minutes until tender.
-
-
Final Touches
-
Add brown sugar and coconut milk (if using) and let it cook for another 5 minutes until the sauce thickens.
-
Adjust seasoning to taste.
-
