- 2 cups baby potatoes, halved
- 2 carrots, peeled and cut into large chunks
- 1 red onion, cut into wedges
- 2 zucchinis, sliced
- 1 red bell pepper, cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning

Preheat and Prepare:
Preheat your stovetop on medium-low heat with the Platinum Oval Roaster base in place. -
Season the Chicken:
In a small bowl, combine olive oil, minced garlic, salt, pepper, paprika, rosemary, and thyme.
Rub the seasoning mixture all over the chicken, including under the skin for maximum flavor.
Stuff the chicken cavity with the lemon halves and fresh parsley. -
Prepare the Vegetables:
In a large bowl, toss the potatoes, carrots, onion, zucchinis, and bell pepper with olive oil, sea salt, pepper, and Italian seasoning. -
Layer Ingredients in the Roaster:
Place the chicken breast-side up in the Platinum Oval Roaster base.
Arrange the seasoned vegetables around the chicken, ensuring an even spread. -
Cover and Cook:
Cover the Oval Roaster with its lid and cook on medium-low for 15-20 minutes to create a natural browning effect.
Then reduce the heat to low and continue cooking for about 1 hour.
Use the built-in thermometer to ensure the chicken’s internal temperature reaches 165°F (75°C) in the thickest part. -
Rest and Serve:
Remove the Oval Roaster from heat and let the chicken rest for 10 minutes.
Carefully carve the chicken and serve with the roasted vegetables for a delicious and healthy meal.
Tips:
- Use the trivet and cradle to elevate the chicken slightly if you prefer extra crispiness on the bottom.
- Add a splash of white wine or chicken stock to the roaster for extra flavor and moisture.
