Ingredients:

  • 4 fresh fish fillets (salmon, cod, or your choice)
  • 2 lemons (sliced into rounds)
  • 3 garlic cloves (minced)
  • 4 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp fresh dill (chopped)
  • Salt and pepper to taste
  • Optional: 1 cup cherry tomatoes and 1 cup asparagus for added vegetables.

Instructions:

  1. Preheat: Preheat your Platinum Jumbo Gourmet Skillet with the Dome Cover on medium heat for 3-5 minutes until evenly heated.

  2. Season the Fish: Pat the fillets dry with a paper towel. Rub olive oil, salt, and pepper onto both sides of the fillets.

  3. Layer Ingredients:

    • Place half the lemon slices and half the garlic at the bottom of the roaster.
    • Lay the fillets on top.
    • Scatter the remaining lemon slices, garlic, parsley, and dill over the fish.
    • Add cherry tomatoes and asparagus if using for a complete meal.
  4. Add Butter and Olive Oil: Dot butter over the fish and drizzle with remaining olive oil.

  5. Cook in the Roaster:

    • Place the roaster’s lid on and lower the heat to medium-low.
    • Cook for 8-12 minutes (depending on the thickness of the fillets), or until the fish is opaque and flakes easily with a fork.
  6. Serve: Gently lift the fillets with a spatula, serve on plates with the roasted vegetables and lemons as garnish.
