Ingredients (Serves 6-8)

2 tbsp olive oil or avocado oil

2 lbs ground bison (or lean ground beef if unavailable)

1 large red onion, diced

4 garlic cloves, minced

2 medium sweet potatoes, peeled and cubed

1 red bell pepper, diced
-
1 yellow bell pepper, diced
-
1 can (15 oz) black beans, drained and rinsed
-
1 can (15 oz) fire-roasted diced tomatoes

2 cups beef or bone broth
-
1/4 cup pure maple syrup
-
2–3 chipotle peppers in adobo sauce, chopped

1 tbsp adobo sauce
-
1 tsp smoked paprika
-
1 tsp ground cumin
-
1/2 tsp cinnamon (adds warmth)

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro and toasted pumpkin seeds (pepitas) for garnish
Instructions (Platinum 7 QT)

Preheat & Sauté:
Preheat your Platinum 7 QT over medium heat for about 3 minutes (water test: a few droplets should dance on the surface).
Add oil and immediately sauté onions and garlic for 2-3 minutes until translucent. -
Brown the Bison:
Add ground bison and cook until browned (about 6-8 minutes). Season with salt, pepper, cumin, paprika, and cinnamon while browning. -
Add Veggies & Flavor Base:
Stir in sweet potatoes, bell peppers, chipotle peppers, adobo sauce, maple syrup, and fire-roasted tomatoes. -
Simmer the Magic:
Pour in broth and black beans. Cover with the lid and reduce heat to low-medium. Let simmer for 35–40 minutes, or until sweet potatoes are tender. -
Finish & Serve:
Stir in lime juice for brightness. Taste and adjust seasoning if needed. -
Garnish & Enjoy:
Serve in bowls topped with fresh cilantro, toasted pepitas, or a dollop of Greek yogurt or sour cream.
