  • 4 garlic cloves, minced

  • 2 medium sweet potatoes, peeled and cubed

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) fire-roasted diced tomatoes

  • 2 cups beef or bone broth

  • 1/4 cup pure maple syrup

  • 2–3 chipotle peppers in adobo sauce, chopped

  • 1 tbsp adobo sauce

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • 1/2 tsp cinnamon (adds warmth)

  • Salt and pepper, to taste

  • Juice of 1 lime

  • Fresh cilantro and toasted pumpkin seeds (pepitas) for garnish

Instructions (Platinum 7 QT)

  1. Preheat & Sauté:
Preheat your Platinum 7 QT over medium heat for about 3 minutes (water test: a few droplets should dance on the surface).
Add oil and immediately sauté onions and garlic for 2-3 minutes until translucent.

  2. Brown the Bison:
Add ground bison and cook until browned (about 6-8 minutes). Season with salt, pepper, cumin, paprika, and cinnamon while browning.

  3. Add Veggies & Flavor Base:
Stir in sweet potatoes, bell peppers, chipotle peppers, adobo sauce, maple syrup, and fire-roasted tomatoes.

  4. Simmer the Magic:
Pour in broth and black beans. Cover with the lid and reduce heat to low-medium. Let simmer for 35–40 minutes, or until sweet potatoes are tender.

  5. Finish & Serve:
Stir in lime juice for brightness. Taste and adjust seasoning if needed.

  6. Garnish & Enjoy:
Serve in bowls topped with fresh cilantro, toasted pepitas, or a dollop of Greek yogurt or sour cream.
