Ingredients

Seafood:

  • 1 lb firm white fish (like cod or snapper), cut into chunks

  • ½ lb shrimp, peeled and deveined

  • Juice of 1 lime

  • Salt and pepper to taste

Vegetables & Aromatics:

  • 2 tbsp olive oil

  • 1 medium onion, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 3 garlic cloves, minced

  • 1 medium tomato, diced

  • 1 tbsp grated fresh ginger

  • ½ tsp ground coriander

  • ½ tsp smoked paprika

  • ¼ tsp cayenne pepper (optional for heat)

Liquids:

  • ¾ cup coconut milk

  • ½ cup seafood or vegetable broth

  • 1 tbsp palm oil (or additional olive oil if unavailable)

  • ¼ cup fresh cilantro, chopped

  • 2 green onions, thinly sliced

Optional Garnish:

  • Extra cilantro and lime wedges for serving

Instructions

  1. Marinate the Seafood
    In a bowl, combine the fish and shrimp with lime juice, salt, and pepper. Let marinate for 15–20 minutes while you prepare the base.

  2. Sauté Aromatics in the Platinum Skillet
    Preheat your Platinum Large Gourmet Skillet on medium heat. Add olive oil, then sauté onions, bell peppers, and garlic until fragrant and soft — about 5–7 minutes. Add the tomato, ginger, coriander, paprika, and cayenne. Stir and let simmer for 2 more minutes to deepen the flavor.

  3. Add Liquid Ingredients
    Pour in the coconut milk and seafood broth. Stir gently to combine, then bring the mixture to a gentle simmer.

  4. Add Seafood
    Nestle the marinated fish and shrimp into the skillet. Cover with the Platinum lid and let simmer gently on low for 10–12 minutes, or until the fish is flaky and the shrimp are cooked through.

  5. Finish & Garnish
    Drizzle in the palm oil (if using) and sprinkle with fresh cilantro and green onions. Cover again for 1–2 minutes to allow flavors to infuse.

  6. Serve
    Serve hot with steamed rice, cassava flour (farofa), or crusty bread to soak up the flavorful broth.
