Ingredients
- 1 lb lamb shoulder or leg, thinly sliced
- 2 tbsp olive oil
- 1 small yellow onion, thinly sliced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground cinnamon
- ½ tsp ground coriander
- Salt and black pepper, to taste
- ¼ cup pomegranate molasses
- ¼ cup water or broth
- ½ cup fresh pomegranate seeds
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
Instructions
1. Preheat & Sear
- Preheat your Platinum Medium Gourmet Skillet on low to medium heat.
- Add olive oil and allow it to warm gradually.
- Add lamb slices and sear until browned (about 3–4 minutes per side).
- Remove and set aside.
2. Build the Flavor Base
- In the same skillet, add onions and cook until softened.
- Add garlic and sauté briefly until fragrant.
3. Spice Infusion
- Stir in cumin, paprika, cinnamon, and coriander.
- Let spices bloom for 30–45 seconds to release their oils.
4. Create the Sauce
- Add pomegranate molasses and water/broth.
- Stir well, scraping any fond from the skillet surface.
5. Combine & Simmer
- Return lamb to the skillet.
- Cover and cook on low heat for 10–15 minutes until tender.
6. Finish
- Stir in lemon juice and half the pomegranate seeds.
- Garnish with remaining seeds and fresh parsley.
