Ingredients

  • 6 beef or pork sausages (thick Aussie-style work best)

  • 1 tbsp olive oil

  • 1 brown onion, sliced

  • 2 cloves garlic, minced

  • 2 potatoes, diced small

  • 1 red capsicum, sliced

  • 1 zucchini, sliced

  • 1 tsp smoked paprika

  • ½ tsp dried thyme

  • Salt and cracked pepper, to taste

  • 2 tbsp tomato relish or BBQ sauce

  • Fresh parsley, to serve

Instructions

  1. Heat the Platinum Large Gourmet Skillet over medium heat and add olive oil.

  2. Add sausages and brown on all sides until cooked through. Remove and slice into chunky pieces.

  3. In the same skillet, add onion and garlic. Sauté until soft and fragrant.

  4. Toss in potatoes and cook for 8–10 minutes, stirring occasionally, until golden and tender.

  5. Add capsicum and zucchini, seasoning with paprika, thyme, salt, and pepper.

  6. Return sausages to the skillet and stir through tomato relish or BBQ sauce.

  7. Let everything sizzle together for 2–3 minutes until glossy and bubbling.

  8. Finish with fresh parsley and serve straight from the skillet.
