Ingredients:

  • 3 lbs beef shank (with bone marrow)
  • 10 cups water
  • 1 medium onion, quartered
  • 1 tbsp whole peppercorns
  • 2 tbsp fish sauce (or to taste)
  • 2 ears of corn, cut into halves
  • 3 medium potatoes, quartered
  • 1 small cabbage, quartered
  • 1 bunch bok choy
  • 1 cup green beans
  • 2 stalks leeks or green onions, sliced
  • Salt to taste

Instructions:

1. Boil the Beef Shank:

  • Place beef shank in the Platinum 12 QT. Add water, onions, and whole peppercorns.
  • Cover and bring to a boil on medium heat.
  • Once boiling, reduce to low heat and simmer for 2–3 hours or until the meat is tender. Skim off excess fat and scum.

2. Add Flavor & Vegetables:

  • Pour in fish sauce and let simmer for another 10 minutes.
  • Add corn and potatoes, and cook for 10 minutes.
  • Toss in cabbage, bok choy, and green beans. Simmer for another 5 minutes until vegetables are tender.

3. Final Touches:

  • Add leeks or green onions.
  • Season with salt to taste.
  • Turn off heat and let it sit covered for a few minutes to let the flavors deepen.

4. Serve & Enjoy!

  • Serve hot with steamed rice and a side of calamansi or lemon with fish sauce for dipping.
