Ingredients:
- 3 lbs beef shank (with bone marrow)
- 10 cups water
- 1 medium onion, quartered
- 1 tbsp whole peppercorns
- 2 tbsp fish sauce (or to taste)
- 2 ears of corn, cut into halves
- 3 medium potatoes, quartered
- 1 small cabbage, quartered
- 1 bunch bok choy
- 1 cup green beans
- 2 stalks leeks or green onions, sliced
- Salt to taste
Instructions:
1. Boil the Beef Shank:
- Place beef shank in the Platinum 12 QT. Add water, onions, and whole peppercorns.
- Cover and bring to a boil on medium heat.
- Once boiling, reduce to low heat and simmer for 2–3 hours or until the meat is tender. Skim off excess fat and scum.
2. Add Flavor & Vegetables:
- Pour in fish sauce and let simmer for another 10 minutes.
- Add corn and potatoes, and cook for 10 minutes.
- Toss in cabbage, bok choy, and green beans. Simmer for another 5 minutes until vegetables are tender.
3. Final Touches:
- Add leeks or green onions.
- Season with salt to taste.
- Turn off heat and let it sit covered for a few minutes to let the flavors deepen.
4. Serve & Enjoy!
- Serve hot with steamed rice and a side of calamansi or lemon with fish sauce for dipping.
