Ingredients:
- 4 lbs pork shoulder (bone-in or boneless), cut into large chunks
- 2 tbsp lard or vegetable oil
- 1 cup orange juice (freshly squeezed)
- 1/2 cup lime juice
- 4 cloves garlic, minced
- 1 medium onion, sliced
- 1 tbsp salt
- 1 tbsp black pepper
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp chili powder
- 2 bay leaves
- 1/2 cup Coca-Cola (optional, for caramelization)
Instructions:

Preheat & Prepare
- Preheat your oven to 300°F (150°C).
- Place the pork chunks in the Oval Roaster.

Season & Marinate
- Rub the pork with salt, pepper, cumin, oregano, paprika, and chili powder.
- Pour in the orange juice, lime juice, minced garlic, and sliced onions.
- Add bay leaves and drizzle Coca-Cola (if using) for a slight sweetness.

Slow Roast
- Cover the roaster with its lid and place it in the oven.
- Cook for 3.5 to 4 hours, basting the pork every hour with its juices.

Crisp It Up
- Remove the lid and increase the oven temperature to 425°F (220°C).
- Let the pork roast uncovered for 15-20 minutes until it develops a crispy, golden crust.

Shred & Serve
- Remove the pork from the roaster and shred it using two forks.
- Drizzle some cooking juices over the shredded meat for extra flavor.
Serving Suggestions:
- Serve with warm corn tortillas for tacos.
- Garnish with chopped cilantro, diced onions, and lime wedges.
- Pair with Mexican rice, refried beans, or a fresh salsa.
