Ingredients

  • 2 lbs pork belly (cut into 1.5-inch chunks)
  • 4 cloves garlic (minced)
  • 2 shallots (finely chopped)
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp black pepper
  • 1 tbsp sugar (for caramelizing)
  • 4 boiled eggs (peeled)
  • 1 can coconut water (~14 oz)
  • 2 cups water
  • 1 tbsp cooking oil

Instructions

  1. Marinate the Pork:
    In a large bowl, mix the pork belly with fish sauce, soy sauce, oyster sauce, black pepper, minced garlic, and shallots. Let it marinate for at least 30 minutes (or overnight for deeper flavor).

  2. Caramelize the Sugar:

    • Place your Platinum 7 QT cookware on medium heat.
    • Add 1 tbsp sugar and cook until it melts and turns golden brown (be careful not to burn it).
    • Quickly add 1 tbsp oil and stir.
  3. Sear the Pork:

    • Add the marinated pork to the pot and sear on all sides until slightly browned.
    • Stir well to coat the pork in the caramel sauce.
  4. Simmer the Dish:

    • Pour in coconut water and 2 cups of water (enough to cover the pork).
    • Bring to a boil, then reduce to low heat and cover.
    • Simmer for 1 hour, stirring occasionally.
  5. Add Boiled Eggs:

    • After 1 hour, add the peeled boiled eggs to absorb the sauce.
    • Continue simmering for another 20-30 minutes, until the sauce thickens and the pork is tender.
  6. Final Touches:

    • Taste and adjust seasoning with more fish sauce or sugar if needed.
    • Garnish with chopped green onions and serve with steamed jasmine rice and pickled vegetables.
