Ingredients

  • 2 cups diced potatoes (fresh or frozen)

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 1 cup cooked sausage, bacon, or ham (optional)

  • 2–3 eggs

  • 2 tablespoons oil or butter

  • Salt and pepper

  • Paprika or chili powder (optional)

  • Chives or parsley for topping


Instructions

  1. Cook the potatoes Heat oil in your skillet over medium‑high. Add potatoes, salt, and pepper. Cook until golden and crisp on the edges.

  2. Add vegetables Stir in onions and peppers. Cook until softened and lightly browned.

  3. Add protein If using sausage, bacon, or ham, add it now and let it warm through.

  4. Make space for the eggs Create small wells in the hash. Crack eggs directly into the skillet.

  5. Cover and cook Lower heat to medium. Cover the skillet and cook until eggs reach your preferred doneness.

  6. Serve Top with herbs and more pepper if you like.
