Ingredients

  • 2 tablespoons olive oil

  • 4 boneless chicken thighs or breasts

  • 1 cup pineapple chunks (fresh or canned, drained)

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon grated fresh ginger

  • 3 tablespoons honey

  • 2 tablespoons soy sauce

  • Juice of 1 lime

  • Salt and pepper to taste

  • Green onions for garnish


Instructions

  1. Heat olive oil in your Platinum skillet over medium heat.

  2. Season the chicken with salt and pepper.

  3. Add the chicken to the skillet and sear 4–5 minutes per side until golden.

  4. Remove the chicken and set aside.

  5. Add the onion to the skillet and cook until softened.

  6. Stir in the garlic and ginger; cook for 30 seconds.

  7. Add the pineapple and let it caramelize slightly.

  8. Stir in the honey, soy sauce, and lime juice.

  9. Return the chicken to the skillet and reduce heat to low.

  10. Cover and simmer for 8–10 minutes until the sauce thickens and the chicken is tender.

  11. Garnish with green onions before serving.
