Ingredients

  • 2 tablespoons olive oil

  • 4 boneless chicken thighs

  • 1 small onion, chopped

  • 1 red bell pepper, chopped

  • 3 cloves garlic, minced

  • 1 ripe mango, diced (or 1 cup frozen mango)

  • Juice of 1 lime

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in your Platinum skillet over medium heat.

  2. Season the chicken with salt, pepper, cumin, and paprika.

  3. Sear the chicken 4–5 minutes per side until golden; remove and set aside.

  4. Add the onion and bell pepper to the skillet; cook until softened.

  5. Stir in the garlic and cook for 30 seconds.

  6. Add the mango and let it soften and caramelize slightly.

  7. Pour in the lime juice and stir to create a bright, fruity sauce.

  8. Return the chicken to the skillet, reduce heat to low, and cover.

  9. Simmer for 8–10 minutes until the chicken is tender and the sauce thickens.

  10. Garnish with fresh cilantro before serving.
