Ingredients:

  • 1/2 lb pork belly, sliced into small pieces (optional for flavor)
  • 1 cup squash (kalabasa), cubed
  • 1 cup eggplant, sliced
  • 1 cup okra, trimmed
  • 1 cup string beans, cut into 2-inch pieces
  • 1 small bitter melon (ampalaya), sliced thinly
  • 2 tomatoes, diced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 tbsp shrimp paste (bagoong)

Instructions:

  1. Preheat the Platinum Professional Jumbo Skillet on medium heat. Add pork belly and cook until it releases oil (skip this step for vegetarian versions).
  2. Layer the vegetables: squash, eggplant, okra, string beans, bitter melon, tomatoes, onion, and garlic.
  3. Add shrimp paste on top of the vegetables.
  4. Cover with the lid and wait for the vapor seal to form.
  5. Reduce the heat to low and cook for 12-15 minutes. Avoid stirring to maintain layers.
  6. Once done, gently mix the vegetables and serve warm.
