Ingredients:
- 1/2 lb pork belly, sliced into small pieces (optional for flavor)
- 1 cup squash (kalabasa), cubed
- 1 cup eggplant, sliced
- 1 cup okra, trimmed
- 1 cup string beans, cut into 2-inch pieces
- 1 small bitter melon (ampalaya), sliced thinly
- 2 tomatoes, diced
- 1 onion, sliced
- 3 garlic cloves, minced
- 2 tbsp shrimp paste (bagoong)
Instructions:
- Preheat the Platinum Professional Jumbo Skillet on medium heat. Add pork belly and cook until it releases oil (skip this step for vegetarian versions).
- Layer the vegetables: squash, eggplant, okra, string beans, bitter melon, tomatoes, onion, and garlic.
- Add shrimp paste on top of the vegetables.
- Cover with the lid and wait for the vapor seal to form.
- Reduce the heat to low and cook for 12-15 minutes. Avoid stirring to maintain layers.
- Once done, gently mix the vegetables and serve warm.
